Tomato and Pomegranate salad

Serves 4


1 punnet red cherry tomatoes, halved

1 punnet yellow cherry tomatoes, halved

1 punnet of plum tomatoes, halved

4 medium vine tomatoes,cut into quaters

2  roasted red  capsicums , diced

1 small red onion, finely diced

½ tsp ground allspice

2 tsp white wine vinegar

1½ tbsp pomegranate molasses

½ cup olive oil,

1 pomegranate, seeds removed

Fresh basil leaves to taste



In a large bowl, mix together the tomatoes, red pepper and onion and pomegranate seeds.

In a small bowl whisk the garlic, allspice, vinegar, pomegranate molasses, olive oil, and salt, until well combined.

Pour this over the tomatoes and gently mix toss in the basil leaves and serve.
