Roast Chicken and Rice

Serves 4


1 large chicken

2 lemons cut into halves

Plenty of salt

Olive oil

1 head of garlic cut in half

3 cups of rice

5 cups of water


Pre heat the oven to 180c

In a large roasting dish place the chicken stuff the lemons and garlic into the cavity and salt the chicken very well. Rub the skin of the chicken with plenty of oil and place in the middle of the oven for 1 hour.

Remove the chicken wrap in foil and keep warm and add the rice to the roasting pan add the water and put back into the oven and cook until the rice is al dente and most of the liquid has absorbed.

Return the chicken to the roasting pan and cook for a further 30 minutes

Serve with a green salad.
