Baked Oysters

Serves 24


2 dozen fresh oysters

1 tblspn butter

1/3 cup gluten free breadcrumbs

1/2 clove garlic - minced

1/2 bunch chopped parsley

2 tblspns butter - for serving


Preheat the oven to 220c.

Grease an ovenproof baking dish t will hold all the oysters in one layer.

In a frypan heat 1 tablespoon of butter until it starts to bubble and then add the breadcrumbs and garlic tossing until the breadcrumbs become crisp (about 2 minutes).

Lay the oysters in their shells in the baking dish and top with the breadcrumb mixture. Place a dot of butter on each oyster and cook for 8 minutes until they are golden.

Serve at once, perhaps with lemon slices.
