LAMB CUTLETS WITH ANZAC CRUMBS

INGREDIENTS
12 LAMB CUTLETS
300G ANZAC BISCUITS
300G PANKO CRUMBS
2 CUPS MILK
2 EGGS
2 CUPS FLOUR

set up the crumbing station with 3 bowls or tray

first flour, then egg & milk then crumbs & biscuit crumbs

fry in oil until golden brown

DIPPING SAUCE
½ CUP TZATZIKI DIP
½ CUP MAYONNAISE
1 TBS PARSLEY
½ LEMON JUICE

combine all ingredients and blend

serve with berenberg tomato chutney

700G PHILLI CREAM CHEESE
4 EGGS
300G SOUR CREAM
215G SUGAR
LEMON JUICE & ZEST
2 TBS PLAIN FLOUR
VANILLA
SALT
BASE
300G ANZAC COOKIES
200G MELTED BUTTER

blend the cookies in a food processor and mix with the melted butter

place into your cake tin and set in the fridge

in a food processor blend the cheese, sour cream, lemon zest, lemon juice, sugar & vanilla slowly add the eggs and then the flour

pour the mixture into the cake tin

bake at 150 degrees for about 1hour & 10min don’t open the oven during baking

allow to set in the fridge for a few hours

slice and serve with cream and berries
