Ingredients: (12 biscuits)
1 cup rolled oats
1 cup plain flour
2/3 cup brown sugar
2/3 cup desiccated coconut
Zest of 1 orange
125g butter
2 tbs maple syrup
2 tbs water
1/2 tsp bicarb soda
Rosemary
Method:
Preheat oven to 160 degrees Celcius.
Heat butter, maple syrup, water and rosemary in a heatproof bowl over a saucepan of boiling water. Once butter is melted, add bicarb soda and stir to combine.
Meanwhile, add oats, flour, brown sugar, coconut and orange zest to a large bowl.
Add wet mixture to dry ingredients and stir to combine. Leave to cool.
Dollop tablespoons of mixture on lined baking tray, leaving room for the biscuits to expand.
Bake for 10-12 minutes, or until golden. Allow to cool slightly before transferring to a cooling rack.
