Ham, Mushroom and Herb Fritters

Makes: 30
2 tbs olive oil
Diced Ham
400g button mushrooms, sliced
11/3 cups self-raising flour, sifted
Salt and ground black pepper
1 cup milk
2 eggs, lightly beaten
1 bunch chives, thinly sliced
1/3 cup flat leaf parsley leaves, finely chopped
extra light olive oil, for shallow frying
tzatziki dip, to serve


Method:
1. Heat olive oil in a frying pan over high heat. Add mushrooms. Cook, stirring often for 6 minutes or until liquid has evaporated. Transfer to a bowl. Set aside to cool completely.


2. Combine flour and salt and pepper in a large bowl. Whisk the milk and eggs in a jug
with a fork until well combined. Pour into the flour mixture and stir gently until smooth.


3. Add mushrooms, chives and parsley. Stir gently to combine.


4. Add enough oil to a large non-stick frying pan to cover the base. Heat over medium heat until hot. Drop heaped tablespoonfuls of mixture into pan. Cook for 3 minutes each side or until golden and cooked through. Serve at room temperature topped with a dollop of tzatziki dip.


Note:
Tzatziki dip is a yoghurt and cucumber dip found in the fridge section of the supermarket.

The Somme Tour


Hi all,
Lovely to talk to you about our wonderful day on the Somme and the service at VB.
I feel that I didnt do justice to how special it is to visit this strangely beautiful region that has such a special connection with Australia. however my mother, sister and husband were listening over the net in the next room and said that i got the message across to how special our day was. The one thing i would like to share is the contact details for the tour company that took us around the Somme after the VB service.


Sylvestre Bresson is a local that is actually a qualified professional podiatrist that gave his day job to devote his life to sharing this special place with Aussies. it is a small tour (max 8 people) his knowledge is astounding and being a local you get to off the beaten track places ie: a small farm near Pozieres where we could go into one of the few remaining original german bunkers, down little tracks between farms where he knew farmers had recently found live shells and sure enough there they were live unexploded shells on the side of the road, the medow where in March another Australian soldier was found (the farmers still find 10-15 bodies a month, most will never be identified).

Clove of garlic small amount of parsley oil in pan and simmer for a few mins, add two red and ripe tomatoes diced let cook for a few mins ,add fresh calamari and white wine and cook until tender.

Add tomato paste one tablespoon salt and pepper, cook for twenty mins add a little water then add seafood, fresh prawns and other seafood you wish.

Cook pasta and add with a little bit of the sauce then add rest on top of pasta add Parmesan cheese and bon appetite!
