Ingredients:
2 skinless chicken breast fillets sliced
1 mango sliced
1 avocado sliced
Mixed lettuce leaves
4 tblspns Balsamic vinegar
4 tblspns Olive oil
4 spring onions finely sliced
½ cup roasted walnuts roughly chopped
Salt and pepper to taste
Method:
Heat 2 tbspns of oil in a pan and cook chicken until tender (approx 4-5 mins) then add remaining oil and balsamic vinegar, reduce the heat and cook for 1 min.
Combine lettuce leaves, mango , avocado and spring onions and place on a large platter. Sprinkle over walnuts then top with the chicken breast and drizzle with pan juices. Season to taste and serve with crusty bread and a chilled white wine.
