Ingredients
1kg seedless water melon diced
2 knobs of butter
2tbs white sugar
Spices
1 tsp cumin seeds
1 tsp Coriander seeds
4 cardamom pods
2 tsp ground turmeric
Ice cream to serve
Method
- With a mortar and pestle pound the spices together and set aside.
- Gently heat the butter in a heavy based pan and add the spices, sugar and sizzle until fragrant.
- Add the watermelon and gently toss through the spices coating the melon well.
- Serve straight away with vanilla ice cream.
