Thousands of volunteers will be busy pouring and flipping across the state today for Pancake Day.

Uniting Care is hoping to raise more than $50 thousand from this year's event, with the pancakes to be exchanged for gold coin donations.

"It's a real community event and it just seems to get bigger and bigger each year. The actual motto of pancake day is local people helping other local people and is all about community spirit and fun."
