3 egg whites
Pinch salt
1 ½ cups castor sugar
1 tsp white vinegar
1 tsp cornflour
½ tsp vanilla essence
4 tablespoons boiling water
Place all ingredients into mixing bowl in above order. DO NOT CHANGE THE ORDER....According to Pavlova Queen Dianne Blair the order is EVERYTHING.
Mix with electric beaters till thick peaks form, or do it by hand which I did once and required years of physio to correct my sore shoulder/neck muscles.
Place on tray/plate covered in baking paper and place into pre-heated “moderate” oven for 10 mins. Turn heat down to low and cook for another 1 hour. Turn off heat but leave pav in oven to cool.
When cool, cover in cream/chocolate/fruit etc. Yum....
