Remove the rind of six lemons with a vegetable peeler.

Shred it into very thin strips – as thin as you can

Put that into a jar or container

Mx together 2-3 teaspoons of salt, a teaspoon of sugar and lemon juice.

Pour it over the top until the strips are covered.

Store in a jar or container in the fridge

Use it for garnish on fish, curries, or anywhere you want a bit of zest!
