Ingredients
900 gm brown sugar
375 mls veg oil
750 grms plain flour
3 tsp baking powder
3 tsp cinnamon
1 ½ tsp nutmeg
3 tsp salt
6 eggs
3 tsp vanilla essence
200 grms chopped walnuts
750 grms frozen cranberries
725 grms chopped apple
Method
1 Beat eggs, sugar and oil together until light and fluffy
2 Fold in all other ingredients
2 Bake @ 180 deg C for approx 1 hour makes 2 large 26 cm cakes or if you divide mixture in half makes 2 small 20cm cakes (line tins with baking paper)
Great served warm as a dessert with cream and ice cream, can be made ahead and frozen
