Coconut sticky rice and glazed apple
200g Arborio rice pre blanched
400nls coconut cream
100mls cream
150g sugar
1 vanilla pod
Glazed apple
100g butter
3 large Fuji apples diced
200g brown sugar
- Method
With a heavy based pan place the coconut cream, cream, sugar and vanilla to a simmer.
- Place the rice in the coconut sauce and let the rice soak up the liquid.
- Meanwhile place a pot on the stove with the glazed apple ingredients and cook slowly until all well combined.
- To serve place and spoon of rice in a bowl followed by the glazed apple.
