1 cup of water
¾ Cup of White sugar
850gr cherries halved and pitted
100g Roasted Slithered Almonds
3 Ltrs of Good Quality Vanilla Ice cream
200g Dark chocolate grated
3 tbls cherry liquor or Baileys Irish Cream
Cocoa powder to serve
Extra Cherries to Serve
- Line the base of a 25cm spring form pan with baking paper
- Place water and sugar in a medium saucepan Bring to the Boil
- Add Cherries, reduce heat to medium and simmer for about 5 minutes.
- Drain Cherries and set aside to cool
- Place the almonds in a small frying pan and cook, stirring frequently, over medium heat for 5 minutes or until lightly toasted.
- Remove from pan and allow to cool
- Remove Ice cream from freezer & stand at room temperature until slightly softened
- Transfer ice-cream to a large mixing bowl
- Add the cherries, almonds, chocolate and Liquor gently combine
- Spoon ice cream mixture into the prepared pan and smooth over surface
- Cover with plastic wrap with foil and freeze for 8 hours
Serve slices with extra cherries and dust with cocoa
