Cherry, Chocolate and Almond Ice Cream Cake

1 cup of water
¾ Cup of White sugar
850gr cherries halved and pitted
100g Roasted Slithered Almonds
3 Ltrs of Good Quality Vanilla Ice cream
200g Dark chocolate grated
3 tbls cherry liquor or Baileys Irish Cream
Cocoa powder to serve
Extra Cherries to Serve

 

  • Line the base of a 25cm spring form pan with baking paper
  • Place water and sugar in a medium saucepan Bring to the Boil
  • Add Cherries, reduce heat to medium and simmer for about 5 minutes.
  • Drain Cherries and set aside to cool
  • Place the almonds in a small frying pan and cook, stirring frequently, over medium heat for 5 minutes or until lightly toasted.
  • Remove from pan and allow to cool
  • Remove Ice cream from freezer & stand at room temperature until slightly softened
  • Transfer ice-cream to a large mixing bowl
  • Add the cherries, almonds, chocolate and Liquor gently combine
  • Spoon ice cream mixture into the prepared pan and smooth over surface
  • Cover with plastic wrap with foil and freeze for 8 hours

 Serve slices with extra cherries and dust with cocoa
